Banana Bread 

Here's my favorite banana bread recipe. The banana bread is the most delicious I've baked.  The recipe comes from my mom who received it from my aunt. Enjoy!

2 eggs
2 cups sugar
1/2 cup milk (or almond/oat/banana milk)
2 tsp. lemon (or lime juice)
1/2 tsp. vanilla extract (or imitation vanilla extract 😳 if that's what you already have or can find)
1 stick of butter (allow it to temper or place in the microwave to soften - 20 seconds-ish?) 2 tsp. baking soda
3 cups all-purpose flour
4 whole overripe bananas peeled and sliced

Optional: Light sprinkle of raw sugar to top of mix before baking, top with your favorite nuts or nuts you have in your pantry (I like using walnuts or hazelnuts so far). Preheat oven to 325°F. Whisk your eggs and sugar. Mix wet ingredients together -- milk, citrus juice, vanilla extract, then add softened butter, bananas and flour. Continue to mix ingredients with a spatula. Coat 2 loaf pans with softened butter. Split mix between 2 loaf pans. Should be filled to about half of a pan as it will rise.

Optional: Add raw sugar or chopped nuts on top of mix before placing in the oven.

Bake banana bread for about an hour at 325°F. Around 45 minutes into baking start to check banana bread with a cake tester or toothpick and continue to bake until it comes out clean.

Use this recipe and improvise by using ingredients you already have. OK to substitute bananas for plums or other fruit for example. The plum version is delish 😋 as well.
